🥘 Ingredients
- Flour - plain or all purpose flour.
- Baking powder - optional but keeps the fritters fluffy.
- Corned beef - one tin.
- Eggs - large, free range.
- Salt and pepper - cooking salt and freshly ground black pepper.
- Oil - vegetable or sunflower oil for frying.
- Onion - all purpose brown onion.

🔪 Instructions
Cut the corned beef into small cubes about 1 cm or half an inch.

- To make slicing the beef easier, put it in the freezer for 10 minutes or in the fridge for 30 minutes.
- Cut into thick slices first, then into lengths, then cubes.
Peel and chop the onion.
Put a frying pan over a medium heat and add the oil.
Cook the onions for 5 minutes until soft but not coloured.
To make the batter put the flour in a large bowl and mix in the baking powder and seasoning.
Whisk the eggs together with a fork and beat into the flour until the batter is thick and evenly mixed.
Add the chopped corned beef and cooked onion to the batter.
Stir gently to avoid breaking up the beef.
Heat the remaining oil in the frying pan.
Use the scoop to add portions of the batter to the pan and flatten the mounds slightly with the back of a fork to get an even thickness.
This mixture will make 12 fritters.
⏲️ Cooking Time
Cook for about 4 minutes.
Use a spatula to turn the corned beef fritters over and cook for a further 3- 4 minutes until golden on both sides.
You may need to cook these in batches.
💭 Top Tip
- Line a baking sheet with parchment and place in a preheated oven at 180 C / 350 F / 160 FAN / Gas 4. Add the cooked fritters to the tray to keep warm while the remainder are cooked.

📖 Variations
- Meaty - use leftover cold chicken, ham pieces, cooked bacon or cooked chopped sausage. Other tinned meat, such as ham would work well too.
- Vegetarian - swap the corned beef for tinned chick peas, black beans or white beans. If you have fresh vegetables available add grated carrot, courgettes or parsnips.
- Flavours - add a teaspoon of chilli powder, cumin or paprika or some mixed dry herbs if you prefer.
Storage
- Refrigerator - cool, cover and use within 3 days.
- Freezer - pack into containers and freeze for up to 3 months. Deforst overnight in the refrigerator.
- To reheat - Place on a baking tray in a preheated oven at 180 C / 350 F / 160 FAN / Gas 4 until heated through.
Prepare in Advance
- Make the batter in advance and store covered in the fridge for up to a day.
FAQs
Often, fritters are soggy and not crispy because there is too much moisture in the batter.
This is why the onions are cooked first, so that some of the water is drained out.
If you are using a can of chickpeas, for example, drain them well and then spread them out on some kitchen paper to soak up the moisture.
When adding grated vegetables, such as carrot or courgette, use your hands to squeeze out as much moisture as possible and leave to drain in a sieve.
