Have you ever had Eve's pudding? This recipe is a cross between an apple sponge pudding and an apple crumble, with its layer of caramelised cinnamon Bramley apples on the bottom and rich almond sponge on the top.
When it comes out of the oven all you need is a good serving of custard for a perfectly proper pudding to go with Sunday lunch.

This dessert first appeared in the 19th century and was called mother Eve's pudding, after the biblical Eve. It is said to be a version of the Duke of Cumberland's pudding, which was made with apples, suet and breadcrumbs in the 17th century.
My family love a sponge pudding with custard, but I rarely want to be steaming something for hours on the hob, worrying that it might boil dry, so this oven baked apple sponge pudding is perfect. I can leave it in the oven for 40 minutes to cook and just enjoy the wonderful smell as it bakes.
The ingredients are mainly store cupboard ones, so it's easy to make this recipe, especially in autumn when apples are at their best too.
And, if you like old fashioned puddings, you might like to try macaroni pudding.

🥘 Ingredients
- Apples - Bramley apples are best for cooking and have a delicious flavour when cooked.
- Butter - preferably unsalted and softened for easy mixing.
- Sugar - caster sugar (super fine), for the sponge and soft dark brown sugar for the apples. This gives them a fabulous caramel flavour when cooked. Feel free to reduce the amount of sugar in the apples if you prefer.
- Eggs - large and free range
- Vanilla - extract
- Lemon juice - fresh or from a bottle to prevent discolouration.
- Flour - self raising, but see the next paragraph for instructions.
- Baking powder - a little extra help is required for the sponge to rise due to the addition of the ground almonds.
- Ground almonds - almond powder for extra flavour.
- Flaked almonds - for extra crunch.
- Cinnamon - ground cinnamon to flavour the apples.
- Cornflour - this soaks up the juices from the apples cooking and makes a caramel sauce.

💭 How to make self raising flour
If you want to make your own self raising flour then you can use plain or all purpose flour and add 2 teaspoons of baking powder for each 150g/6oz/1 cup plain flour. For this recipe you would need 1 and a quarter teaspoons.
🍽 Equipment
- Pie dish - 23 cm / 9 inch diameter and 5 cm / 2 inch tall
- Stand / Hand mixer - optional
- Wooden spoon
- Mixing bowl
- Paring knife
🔪 Instructions
Using an electric mixer or wooden spoon, cream the butter and caster sugar together in a bowl until pale and well combined.
Whisk the eggs together with the vanilla extract and add gradually to the mixture, beating well.
Stir together the ground almonds, flour and baking powder.
Fold the flour mix into the egg mixture with a metal spoon.
Peel and core the apples. Cut each quarter into 3 or 4 slices and place into a bowl with the lemon juice.
Stir in the cornflour, cinnamon and dark brown sugar.
Transfer the apple mixture to the pie dish as evenly as possible.
Spread the sponge mixture over the apples and sprinkle with the flaked almonds.
It may be quite thin in places but it will be fine when it cooks.
⏲️ Baking time
Preheat the oven to 180 C/350 F/160 FAN/Gas 4 and bake for 40 - 45 minutes until well risen and golden brown.

🥙 Substitutions
- Almonds - leave out the ground almonds and replace with plain or all purpose flour.
- Apples - use any apples that you have instead of Bramleys.
- Sugar - use any sugar you have but the darker the sugar, the more intense the taste will be.

- Apples - use sliced pears, peaches, plums or nectarines for a change.
- Flaked almonds - sprinkle with chopped hazelnuts or pecans for a different flavour.
🍣Storage
- Refrigerator - cool the pudding to room temperature, cover and refrigerate for up to 5 days.
- Freezer - place in air tight containers in individual portions and freeze for up to a month. Defrost overnight in the refrigerator.
- Reheat - in the microwave or enjoy cold..
🍱Prepare in advance
- Prepare the apple sponge pudding in advance up to 2 days and store in the refrigerator. Bring to room temperature before cooking and allow a few extra minutes in the oven.

This didn't work for me. I followed all of the instructions re ingredients and dish size, but found their wasn't enough sponge mixture to cover the apples. It was also too sweet for my taste when cooked, and mushy in the middle. I'll amend the recipe and try again 🤞
