Vegan mincemeat.is really easy to make with store cupboard ingredients. Somuch better than shop bought, and it tastes amazing!

- 100 g raisins
- 100 g sultanas
- 100 g currants
- 30 g almonds blanched
- 100 g mixed peel
- 80 g crystalised ginger candied
- 100 g dark soft brown sugar
- 100 g vegetarian suet
- 1 lemon
- ½ orange
- 100 g apple Bramley
- 1 teaspoon mixed Spice
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 75 ml dark rum
Chop the ginger into small pieces and chop the nuts roughly.
Zest the orange and lemon and grate the apple.
Put all the dry ingredients into a mixing bowl with the zest and apple.
Mix well and then juice the orange and lemon.
Add the juices to the bowl with the rum and mix.
Cover the bowl with clingfilm or a clean cloth and leave for 2 days, stirring occasionally.
Sterilise the jars and fill with the mincemeat.
Label the jars and leave for 2 weeks to let the ingredients mature.
