Peel and finely mince the garlic. Remove the leaves from the mint and chop finely. Peel the shallots, slice in half lengthways and slice across. Wash the cucumber, cut off the ends and finely slice.
Put the cut vegetables and remaining ingredients into a large mixing bowl and mix gently together.
Pile the salad into a serving dish, cover and chill in the refrigerator for 20 minutes.
